Freeze-Dried Candy is a candy made through freezing and drying processes.
Freezing: Place the candies on the tray and put the entire tray into the freezer, usually around minus 30 degrees Celsius. Freezing helps maintain the candy’s shape and structure and prevents moisture from crystallizing.
Drying: Putting the candies in a dryer removes the moisture from the candies by converting the ice directly from solid to gaseous state. This process is called freeze-drying because the moisture changes directly from solid to gas without passing through the liquid state.
In order to maintain the freshness of the candy and protect it from moisture, the freeze-dried products need to be sealed in fresh-keeping packaging, such as aluminum foil bags or vacuum-sealed bags. Freeze-dried candy has a lighter, crispier texture and retains the taste and aroma of the original candy.
